Muesli Bar Slice Recipe

It has taken me a long time to find the right muesli bar recipe but I think I may have nailed it. There were many, many attempts which turned into just plain muesli but this one actually holds together like a…like a….well like a muesli bar. I’m not sure yet if this is ‘the one’ but it’s pretty darn good.

Ingredients
1 cup rolled oats
1/4 cup sunflower kernels
1/4 cup plain flour
1 cup dried apricots, diced
1/2 cup sultanas
1/4 cup slivered almonds
1/2 cup craisins (optonal)
60g butter or margarine
1/4 cup honey
2 tbsp brown sugar
1 egg
1/4 cup milk

Instructions

  1. Preheat oven to 180 degrees Celcius
  2. In a large bowl mix together the oats, sunflower kernels, flour, apricots, sultanas, almonds and craisins if you are adding these as well.

  3. Melt the butter or margarine, honey and brown sugar in the microwave for 1 minute and add to dry ingredients. Stir in the egg and milk until well combined.

  4. Press into a greased and lined lamington tin and bake for 20 minutes or until golden.

  5. Cut into slice when cooled.
